The course includes classroom work, sensory analysis training, hands on work, and visits to observe cheesemaking.
Taught by Academie staff and with the participation of the Jasper Hill team, this four-day program is an excellent overview and introduction for new and aspiring cheese professionals.
You will be lodged at the beautiful Lakeview Inn, and have opportunities to socialize with the teams from both Mons and Jasper Hill.
This program serves as an appropriate prerequisite to Affinage.
