Affinage: The Art and Science of Maturing Cheese At Jasper Hill Farm

Maison MonS and Jasper Hill have enjoyed a long partnership and closely aligned missions. Hervé Mons contributed to the original cave design at Jasper Hill, whose affinage program is modeled on the traditional French system. We are proud to offer the Academie MonS Affinage course at Jasper Hill Farm in Greensboro, Vermont.

The course includes classroom work, sensory analysis training, hands on work, and visits to observe cheesemaking.

Taught by Academie staff and with the participation of the Jasper Hill team, this five-day provides a comprehensive overview of the techniques, infrastructure, equipment required for an effective affinage program. The course builds upon your prerequisite basic understanding of the cheesemaking process to understand the molecular and biological processes at work on the rinds and the paste of cheese as it ripens.

You will be lodged at the beautiful Highland Lodge, and have opportunities to socialize with the teams from both MonS and Jasper Hill.
