A combination of discussions, lectures, tastings and trips – all with the expert guidance of Academie Director Sue Sturman – provide students with a broad knowledge in the art of cheesemongering.
Two days are dedicated to class based work at the School covering the art of discussing cheese, sensory analysis, cutting and wrapping, sourcing cheese and more.
There will be a day spent visiting a number of the UK’s finest artisan cheesemakers, providing a fascinating and informative insight to each dairy’s unique products and production processes.
For the final day of the course students will travel to London to visit well-respected cheesemongers, including Neal’s Yard Dairy, La Fromagerie, Paxton and Whitfield and the Mons shop at Borough Market.

Lodging option at the Clumber Park Hotel : £380
Accommodation is not included in the cost of this course. We recommend students stay at the Clumber Park Hotel, to allow the discussion to continue during the evenings. This option includes four night’s room-only accommodation, access to the hotel’s spa facilities, and transport between the School and hotel.
