In a unique international partnership, the Academie Opus Caseus is offering a West-Coast course at Point Reyes Farmstead Cheese in Marin County, California. The program offers a concise overview of the industry through the twin lenses France and the California, the home of the US artisan cheese movement.

The program covers:

Academie instructors Laurent Mons and Susan Sturman and the Giacomini family will provide instruction, observation opportunities, and hands-on experience in all phases of the curriculum.

The program will take advantage of the rich culinary context of northern California by incorporating the local bounty: oysters, wines, and the abundant local produce.

Students will be lodged at the Tomales Bay Resort in nearby Inverness. The program will include visits to Cowgirl Creamery to observe lactic-set cheesemaking, and to discuss cheese merchandising. Group dinners will provide a social environment to develop relationships with both the French and American instructors as well as fellow students. The course is limited to 10 participants.

This program serves as an appropriate prerequisite to Affinage.
